Story Behind
The JH process is a development project that has been ongoing for five years. Since 2020, Tri Up has been collaborating with Jake Hu, aiming to gain greater control over the fermentation process and reduce the impact of uncontrollable microbial strains on flavor. Through precise management, we enhance the expression of beneficial characteristics for coffee flavor and body, while gradually deepening our understanding of the relationship between microbial strains and flavor profiles.
Through isolate and cultivate individual microbial strains in a sterile environment before reintroducing them to the producing regions for fermentation. All coffees processed using the JH method are based on the original regional processing techniques. However, by replacing the naturally occurring microorganisms present during fermentation, the JH-introduced strains become the dominant microbes early in the fermentation process. This reduces the activity of wild or undesirable bacteria, ensuring more consistent and controlled flavor expression.
Washed Process: The cherries undergo fermentation with our cultivated culture for 5 days. They are then depulped, washed, and finally dried on raised beds for 26 days.
Natural Process: The cherries undergo fermentation with our cultivated culture for 5 days. They are then dried entirely as whole fruit on raised beds for 40 days.
