1. Cupping — Introduction to Water Chemistry for Coffee

Overview
A beginner-friendly introduction to how water composition shapes coffee flavour.
Participants will taste six coffees, each brewed with five different waters, to clearly experience how minerals highlight different attributes such as acidity, sweetness, clarity, and texture.
This session is designed to demystify water chemistry and give participants a strong sensory foundation — no technical background required.
2. How to Win a World Championship by Only Changing Water
Format: Workshop
Date: 5th April Sun, 6pm-8pm

Level: Intermediate to Advanced

Overview
This workshop showcases the exact philosophy used to win the World AeroPress Championship and over 10 national titles, and to coach 300+ national champions worldwide.
Together, we brew competition coffees and improve them only by changing water composition.
Participants experience first-hand how water can transform a cup without changing grind size, brewer, or recipe.
A powerful session for competitors and professionals interested in performance-driven brewing.
Simon Gautherin will also tag along during the session — participants are welcome to ask him questions and exchange insights throughout the event.
About Simon Gautherin
Simon Gautherin is the Co-Founder of APAX LAB and a leading researcher in water for coffee.
He is the 2026 Australian Brewers Cup Champion, 2021 Australian AeroPress Champion, and coach to the 2025 World AeroPress Champion.
Simon has coached and supported hundreds of competitors worldwide and is known for his approach of using water as the primary tool to dial coffee.
His work focuses on making complex water science practical, sensory, and accessible — while continuously pushing the boundaries of coffee performance.
