Malabar is located in the south west part of India by the coast. Monsoon season comes in every year from June to September which brings plentiful of moisture in the air. In the early days due to all shipping were transported by sail boats to Europe, these coffee absorbed moisture over the ocean and the coffee bean would expand and become pale in color it also create a smooth yet complex unique flavor character. Now this coffee is processed to recreate that unique monsoon flavor.
After coffee cherries had gone through natural process, coffee were put in warehouse with sufficient natural airflow during monsoon season for up to three months. Coffee were then turned and polished before export. This is truly a special coffee that we don’t see every day. If you enjoy coffee with low acidity this is the one.
